One of our elite clients in Dubai is looking for dynamic, self-motivated, highly skilled Sous Chef with experience in Indian cuisine to work as part of a great team who are really striving to put Dubai based restaurant chain on the map. This is a fantastic opportunity for an experienced Sous Chef looking for a new role in an award winning, critically acclaimed group in U.A.E. It is a progressive Indian restaurant serving dishes inspired by ingredients and memories from the Indian subcontinent. You will have the opportunity to work alongside the head chef to create your own menu and really develop your cooking style

Position Purpose :

Are you a chef skilled in Indian cuisine ready to create some of the tastiest Indian food in Dubai ?  As a Sous Chef you are responsible for the smooth operation of the kitchen with emphasis on quality, presentation within the guidelines of the standardized menus and employee training,
Position Responsibilities:

Responsible for all food production and manages all kitchen staff .
Ensures efficient and effective production of all meals to budget, controlling food and labor costs through effective use of menu specifications, staff training and planning, and monitoring of hygienic and safety norms.
Schedules and coordinates the work of chefs, cooks and other kitchen employees including stewards in the lounges to assure that food preparation is economical and technically correct and within budgeted labor cost goals.
Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
Evaluates food products to assure that quality standards are consistently attained.
Execute the culinary process steps and menu design for while adhering to deadlines, cost targets, and interface with procurement and costing
Interacts with colleagues to assure that food production consistently exceeds the expectations of guests.
Plan, organize and execute training for the team in different countries or centers.
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times by promoting Health & Safety, Hygiene, Quality and Security Awareness.
Supervise the main / outlet kitchen in the preparation and presentation of all food items in accordance with the chain’s SOPs and standardized menu guidelines
Monitor regular standards of production to ensure highest level of quality
Monitor all aspects pertaining to the control of the restaurant’s food cost
Participate in the drafting of concept ideas and menus for all special events and functions while encouraging all employees to put forward their ideas and utilizing them wherever practical
Ensure HACCP standards are implemented and follow the appropriate hygiene standards as per Municipality requirements at all times
Ensure consistent on the job training session for culinary colleagues and promote health & safety
Position Requirements :
Minimum 5+ years of experience in 5 star Hotel or Restaurant Kitchen Production on supervisory level
The ideal candidate will be positively spirited and passionate about food and be committed to work together with the service team to deliver an amazing guest experiences every time. You will demonstrate energy and enthusiasm at work, be customer driven, ‘hands on’ and organized. You portray a strong, firm and fair effective leadership style and have proven the ability to work in busy restaurants.

Diploma /Degree/Vocational training in hospitality /Food & Beverage
